I eat fish regularly, any type, I love all of them, also shellfish, my very favorite is the salmon, but it is a little expensive and the sardines and tuna also and they are not expensive at all. I never say no to a shrimp cocktail!

1) "favorite" is the American spelling.  "favourite" is the English spelling.

Don't use "the" when you are referring to something in general.  For example:-

Trees loose their leaves in the autumn (I'm talking about trees in general, so don't use "the")

The trees in my garden have all lost their leaves (I'm talking about specific trees - the ones in my garden - so do use "the")
