I work Monday to Friday regularly. But, on a scale I too work weekends, however alternately. On Thursday, Friday and Saturday I like to meet my friends.

1. The use of "from" in your 1st sentence is optional. In other words, you can use it if you want, or you can do without it. (see http://forum.wordreference.com/showthread.php?t=995366 - the topic is a little different, but it can help)

2. I would say "meet WITH my friends"
