The contraction there're does not exist/is not used.

If you use 'something' it implies a singular noun by using 'things' you get a plural. The scissors can be used to cut various items eg paper, cloth etc.

The 2nd correction is more a matter of taste: there is nothing wrong with saying 'In the second one there's a projector for showing something during a conference' but a native speaker wouldn't say that. I deleted the word 'one' because it is unnecessary but not incorrect.

Using 'sheets of paper' rather than 'papers' is more strictly correct. Paper is not a countable noun. You would say a sheet of paper, two sheets of paper, however the modern trend is to say papers (I suspect this is American English) and you would be understood.  You need to use a quantifier ....eg a flock of sheep not sheeps 

I hope this makes some sense, I'm not an English teacher!
